Surrey XPA Apple Pork Roast

For this recipe, you’ll need:
- Surrey XPA
- Pork Loin
- 3 Apples (the sweeter the better)
- Italian Herb
- 2 Cloves of Garlic
- Sea Salt
- Pepper
- Onion
- Honey
- Mustard
Season the pork loin with a good pinch of salt, pepper and Italian herbs, then sear it in an oven-safe pan until golden. In a small bowl, mix honey, mustard and a splash of Surrey XPA for the glaze.
Slice up your apples, garlic and onions, then add them to the skillet with ½ cup of Surrey XPA. Brush the pork generously with the glaze and roast at 180° for 25-30 minutes. Let the pork rest, then slice and serve with those delicious roasted apples and onions.

Ingredients:
- Fresh Mussels
- 1 Shallot
- 2 Cloves of Garlic
- Half a cup of Heavy Cream
- Lemon Zest
- Pilcrow Pale
- Fresh Parsley
This recipe is pretty simple and takes no more than 20 minutes to complete. Start by steaming your mussels in Pilcrow Pale with some chopped garlic and shallot on medium heat.
Then add some lemon juice to bring out the hoppy citrus flavours of the beer which will add depth to the broth. Let simmer for 3 minutes before adding in your heavy cream. Finish with your chopped parsley and serve with some crispy garlic bread and voila!

List of Ingredients:
- 900g of Beef Chuck (cut into cubes)
- 500ml of DB One
- 2 Tablespoons of Olive Oil
- 1 Large Brown Onion (chopped)
- 3 Cloves of Garlic (minced)
- 3 Large Carrots (peeled and sliced)
- 2 Celery Stalks (chopped)
- 2 Medium Potatoes (peeled and cut into cubes)
- 500ml Beef Stock
- 1 Tablespoon of Tomato Paste
- 2 Tablespoons of All-Purpose Flour
- 2 Bay Leaves
- 1 Tablespoon of Dried Thyme
- Salt
- Black Pepper
- Fresh Parsley (for garnish)
Instructions:
First brown the beef in some olive oil in a large pot or Dutch oven over medium-high heat. Season the beef cubes with salt and pepper, then sear in batches until browned on all sides.
Remove and set aside. In the same pot, add the chopped onion, garlic, carrots, and celery and sauté until softened for about 5 minutes. Next, add in the tomato paste and flour and cook for 2 minutes to remove the bitterness of the paste.
Deglaze everything with a can of DB One, scraping up any brown bits from the bottom of the pot. Add the seared beef back into the pot with beef stock, potatoes, bay leaves, and thyme. Bring to a boil, then reduce to simmer, cover, and cook for 2-3 hours until tender.
To finish off, add some salt and black pepper for seasoning, remove bay leaves, garnish with fresh parsley, and enjoy with your choice of starch.
Freedom Trail IPA Chicken Marinade

Here's what you’ll need:
- 4 Boneless Chicken breasts
- 500ml Freedom Trail IPA
- 3 Cloves Garlic (minced)
- 2 Tablespoons of Olive Oil

- Juice of 1 Lemon
- 1 Teaspoon of Smoked Paprika
- Salt
- Pepper
